An Italian icon reimagined in the Panettone della Gherardesca, the result of a collaboration between Executive Chef Paolo Lavezzini, Executive Pastry Chef Mariano Dileo, and the artisanal bakery Leonardo Firenze. A true pleasure for the senses, created to surprise and delight. Its flavors combine earthy aromas—bay leaf, rosemary, and chestnut honey—with delicacies such as Apulian almonds and rich Brazil nuts. Presented in an elegant red box enriched with golden details inspired by the Hotel’s elegance and the symbols of Florence, including the Duomo, this year’s gift box is ready to reveal unique flavors.
Tea time and aperitivo
The timeless ritual of Afternoon Tea transforms into a moment of refined Christmas magic, with signature pastries, savory delights, aromatic teas, and soft jazz notes filling the Atrium Bar. The Panettone della Gherardesca, paired with exceptional spirits, completes this seasonal ritual, offering a truly special gourmet moment.
At Bar Berni, the traditional merenda italiana becomes a sensory experience celebrating the simplicity and elegance of holiday flavors. Upcoming holiday events
14 December 2024 – Open Day 2025 (10:00–16:00)
Every year, the Gherardesca Garden opens its gates, transforming into a true celebration. Families and visitors may stroll through the park discovering food stations, local producers, live music, and experiences designed for all ages, in a path that blends conviviality and fun.
This year, the Open Day will support AIL Firenze, involved in the renovation of Casa AIL, which offers free accommodation to patients and families receiving treatment in the city’s hospitals, and Pallium OdV, which will use the collected funds to purchase a portable ultrasound device for free home healthcare assistance.
Minimum donation for entry: 1 euro per adult.

Onde presents a Christmas Eve dinner entirely dedicated to seafood and inspired by Mediterranean flavors. The evening concludes with the irresistible dessert room—a sweet way to welcome Christmas.

The celebrations continue with the Midnight Party in the Salone del Conventino, with music, dancing, and sparkling lights to ring in the new year.
Palazzo del Nero – Ristorante Onde
Onde offers an elegant seafood menu followed by a sumptuous dessert buffet. After dinner, guests are invited to join the Midnight Party in the Salone del Conventino (22:30–2:30), featuring cocktails, performances, and a DJ set.
External guests may also purchase access to the Midnight Party only.
